Simply Yummy : ) !

Fresh Plum Cake (for breakfast or desert)
I got this recipe from allrecipes.com, and so I simply altered it a little. It turned out beautifully!
I thought that I would share it with you - so enjoy!

10 Easy steps to this master - piece.

Ingredients:
3 eggs separated
1/2 cup butter, softened
1/2 cup sugar
1Tbs lemon or orange zest
1tsp vanilla
1 cup all purpose flour (I use whole wheat)
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp baking powder
1/4 tsp salt
1 1/2 cups fresh plums, pitted and sliced (leave the skin on)
2 Tbs brown sugar
3 Tbs uncooked oats

Directions:
1. preheat oven to 375 F and grease a 9 in round pan, a bunt pan, or a deep cobbler dish (that's what I used, It's like a glass dish that is oven safe, and we use it for casseroles)

2. separate egg white into a medium bowl  and beat with electric mixer until white and fluffy, they should stand on their own (not quite a meringue consistency) then set aside for later (you will use the yolk later)
like this.

3. In a large bowl beat together 1/2 cup butter and 1/2 cup white sugar. Add all three egg yolks and vanilla. Grate in zest.

4. in med bowl mix together 1 cup flour, spices, salt, and baking powder.

5. Add dry ingredients to butter/sugar mix (make sure to scrape the sides with a spatula). Then simply fold in the fluffy egg whites (don't stir just fold)

6. Spread batter in pan (there will only be about 1in of batter - don't worry : )

7. Now, carefully and artfully arrange sliced plums on the batter. Spring with brown sugar and oats

8. And pop the baby in the oven for 40min (don't peak!) you may want to broil the cake for the last minute or so, just to have a nice golden color

9. let cool and serve with coffee, vanilla ice cream, and cool whip

10. Enjoy : ) !

Tomatoes

Tomatoes - so good! - so good for you!
I was eating a tomato sandwich today, made with fresh, local, ripe, juicy tomatoes, and Oh' it was so good. So I felt a little inspired to give the little guys their due credit : )

1. Tomatoes are high in Lycopene. Which is credited for lowering blood pressure, possible, halping to prevent cancer, and reducing your risk of heart decease.
2. They are high in vitamin C - high like as in 57.3% of what your body needs daily.
3. A good source of vitamin A.
Vitamin A fights cancer by inhibiting the production of DNA in cancerous cell.
Stroke victims who have high levels of vitamin A in their systems are less likely to die or suffer disabilities from the stroke. Eating plenty of fruits and vegetables, like tomatoes, are a good defense against stroke and its complications.

 SO EAT UP!!!!!
P.S just a little side note: Farmer's Market has the best, locally grown tomatoes in our area. So stop by sometime - open Monday 5:00pm - 7:00 pm, Tuesdays and Thursdays 6:00am-10:00am, and on Saturdays from 7:00am-10:00am. : )

Thrifty Headbands

We all want to have cute or nice things - to ware, to carry, or just to decorate with. We all have old things - things we can't use, things that don't fit, or maybe there just not "in" right now. So what do you do about this problem? Get creative! So here are a few ideas for making old into new.

Braided Headband

Materials:
  • 3 scrap strips of fabric
  • Elastic
Instructions:
  1. Cut your fabric into 3 strips measure 20 inches by 2 inches. To get a slightly rougher look, rip your fabric rather than cutting.

  2. Place the ends over each other and sew to secure.

     Braided Headband

  3. Braid your fabric until you reach the end, and then sew over all 3 pieces again to secure. Make sure you braid consistently. If you start braiding tightly, make sure you braid the entire length tightly.

     Braided Headband

  4. Measure your braid and measure your head. Now subtract your braid measurement from your head measurement – this will give you how long your elastic should be. Cut your elastic. You can really use any elastic, but I used fold over elastic because it comes in lots of cute colors.

  5. Attach your elastic to the ends of the braid by using a zig zag stitch.

     Braided Headband

  6. I also made another thinner head band using ½-inch-wide strips. For this one instead of laying the elastic flat over the braid before sewing, I folded it over the ends encasing them, and hand stitched it closed.

    Braided Headband

And there you have it! An adorable braided headband you can wear a million ways!

A Little Taste of Heaven

We have spent many hours trying to find the perfect biscuit recipe. Consequently, poor little ole me, has to sample all the different biscuits :(
So with my expertise in biscuit critiquing, these are by far, the best biscuits yet!
We will be selling these biscuits for $ 1.00 @ Farmer's Market this Saturday, along with Blueberry Scones, and (If you're lucky) Sausage Balls - yum - yum!

So for all of you who can come to Farmer's Market- I know you'll enjoy this!
BTW - The first week we sold biscuits at Farmer's Market this year, was awful. So we are so happy to finally have a better recipe - these biscuits have been compared to Haree's :o
P.S I had a whole plate of biscuits to take a picture of, but they were gone before I could snap the camera :)
